The 2025 harvest is distinguished by its early ripening, moderate yields, and Chardonnays that express the purest essence of the fruit, supported by perfectly balanced acidity. It reflects the steadfast commitment of Champagne AYALA’s teams and partners, in both vineyard and winery — a year guided by patience and the pursuit of perfect timing.
The 2025 viticultural year in Champagne stood out for its remarkable serenity. Supported by generally sunny weather and rainfall that was both sufficient and well-distributed, it offered ideal conditions for the vine.
Budburst unfolded smoothly, aided by the absence of spring frost and excellent soil mineralization. While flowering showed some variations—shaped by alternating micro-periods of warmth and coolness—these merely accentuated the differences between early-ripening areas such as the Sézannais, Aube, and Vitryat, and later-ripening zones like the Massif de Saint-Thierry, the Vallée de la Marne, and the western Montagne de Reims. Veraison then proceeded at a particularly brisk pace.
This sense of calm continued through to the harvest, which benefited from highly favorable conditions marked by earliness and a rapid ripening dynamic. The sanitary state of the grapes proved excellent.
It quickly became apparent that aromatic maturity followed a different rhythm than technological maturity, making the choice of harvest date a decisive factor. Guided by Champagne AYALA’s Vineyard & Supply team, partner winegrowers showed patience, waiting for the optimal moment to preserve fruit purity and avoid any vegetal character.
The first secateurs were lifted on August 23, and the final musts were received on September 10. The steady, well-paced rhythm of picking allowed for a serene and well-managed harvest — one that promises great potential.
Champagne AYALA received grapes from 73 crus, drawn from Champagne’s six great Terroirs: the Côte des Blancs, Montagne de Reims, Vitryat, Sézannais, Vallée de la Marne, and Côte des Bar.
This diversity of crus and grape varieties was marked by a predominance of Chardonnay, the Maison’s signature grape.
The 2025 harvest marks the conversion to organic viticulture of 6.44 hectares of the Maison’s own vineyards, following three years of dedicated work on parcels in Chouilly, Passy-Grigny, and Champvoisy. This milestone is part of a broader commitment to practices that respect the soil, biodiversity, and the men and women who bring Champagne to life.
Building on this momentum, the Atelier Vignoble project, launched in 2024, continues to evolve. This year, the Maison deepened its approach to parcel-based selection alongside several partner winegrowers.
Each plot was carefully monitored throughout the season — through vine observation, berry tasting, and maturity analyses — offering a sensitive reading of the fruit’s development.
This meticulous approach extends into the winery, where each must is kept separated and identified by origin — whether in oak, stainless steel, or concrete — allowing Champagne AYALA to further refine its mastery of micro-vinification, a hallmark of its high-precision savoir-faire.
