The 2025 harvest is distinguished by its early ripening, moderate yields, and Chardonnays that express the purest essence of the fruit, supported by perfectly balanced acidity. It reflects the steadfast commitment of Champagne AYALA’s teams and partners, in both vineyard and winery — a year guided by patience and the pursuit of perfect timing.
The 2025 viticultural year in Champagne stood out for its remarkable serenity. Supported by generally sunny weather and rainfall that was both sufficient and well-distributed, it offered ideal conditions for the vine.
Budburst unfolded smoothly, aided by the absence of spring frost and excellent soil mineralization. While flowering showed some variations—shaped by alternating micro-periods of warmth and coolness—these merely accentuated the differences between early-ripening areas such as the Sézannais, Aube, and Vitryat, and later-ripening zones like the Massif de Saint-Thierry, the Vallée de la Marne, and the western Montagne de Reims. Veraison then proceeded at a particularly brisk pace.
Champagne AYALA received grapes from 73 crus, drawn from Champagne’s six great Terroirs: the Côte des Blancs, Montagne de Reims, Vitryat, Sézannais, Vallée de la Marne, and Côte des Bar.
This diversity of crus and grape varieties was marked by a predominance of Chardonnay, the Maison’s signature grape.
