Contours of AYALA
Honour the Essence is the mission carried out by Maison AYALA, from the finest expression of Champagne’s Terroirs to the importance of sharing moments together. Committed House from vine to glass, from earth to mouth, Champagne AYALA shifts the boundaries of a conscious art-of-living, making it more vibrant.
At the heart of the Grands Crus of Aÿ-Champagne, Champagne AYALA pursues its development through a responsible and long-term vision. Convinced that the excellence of a great champagne goes hand in hand with exemplary environmental stewardship, the House has embarked on an ambitious strategy to decarbonise its historic site, with a clear objective: reducing its CO₂ emissions by 90% by 2030.
This initiative builds on the pioneering commitment of the Champagne appellation, which became the first French wine region to carry out a carbon assessment in 2003. In keeping with this collective momentum, Champagne AYALA conducted a comprehensive assessment of its own activities in 2019. This analysis identified key areas for improvement, particularly within its production site, where the House has direct control over both decision-making and implementation.
Supported by specialist experts, Champagne AYALA has developed a comprehensive and pragmatic decarbonisation strategy designed to significantly improve the energy performance of its facilities. The ambition is clear: to produce more efficiently while maintaining the House’s uncompromising standards of quality and using fewer resources.
At the heart of this transformation, a new winery and a redesigned cellar have been conceived to optimise production conditions. The semi-underground winery naturally regulates temperature, reducing energy requirements, while enhanced insulation throughout the buildings contributes to greater energy efficiency.
The transition towards lower-carbon energy sources is another key pillar of the project. Reducing reliance on gas in favour of electricity, together with the gradual installation of high-performance equipment such as a heat pump, reflects this commitment. Ultimately, these improvements are expected to reduce the energy consumption of certain facilities by up to 70%, without compromising either quality or the precision of the winemaking process.
Alongside these major investments, Champagne AYALA continues to improve its environmental performance through everyday actions. Production equipment is managed more efficiently thanks to advanced monitoring and programmable control systems, while targeted renovations of the historic buildings include enhanced insulation and high-performance UV-protective glazing.
Additional initiatives, including the optimisation of production equipment and the continuous reduction of energy losses throughout the winemaking process, further reinforce this comprehensive approach. Together, these actions embed environmental performance into the day-to-day operation of the House.
Through this decarbonisation project, Champagne AYALA reaffirms its ambition to be a leading House in corporate social responsibility. This commitment extends across its entire ecosystem, including partners, winegrowers and customers.
Today, crafting exceptional champagnes means combining expertise, innovation and respect for the environment. By taking action now, the House is helping preserve the natural balance that underpins the unique character of the wines of Champagne.
Decarbonising today to preserve tomorrow is a conviction that guides Champagne AYALA in its pursuit of lasting quality.
