At Champagne AYALA, the tasting of Vins Clairs is more than a seasonal ritual—it is the cornerstone of the House's upcoming blends'style, driven by precision, and pursuing its quest for purity.
Following the 2024 harvest, the House received 61 crus, each vinified individually in one of the 120 small stainless-steel vats. This micro-vinification approach—a distinctive hallmark of Champagne AYALA—allows each cru to reveal its singular expression without compromise. Of these, more than 50 are Chardonnay, sourced from the finest Terroirs across Champagne. Such diversity forms the raw material of the House’s craftsmanship and exemplifies its deep-rooted commitment to this emblematic grape.
Since November, over 150 base wines have been meticulously tasted—one by one, day after day. Each vin clair tells a unique story of the harvest. These vins clairs, unadorned and without effervescence, offer the purest lens through which to perceive the identity of each cru and grape variety coming from the Terroirs.
The tasting process is not only technical, but also deeply collaborative. Champagne AYALA regularly welcomes its winegrower partners to the cellar to taste the wines born from their own vineyards—a moment of shared insight and mutual respect. This dialogue enriches the understanding of the vintage and strengthens the House’s vision of sustainability and Terroirs expression.
Within the wine team, each nuance is weighed with exacting care. Reserve wines, preserved in small vats as a living memory of past harvests, are added judiciously to enhance the depth and texture of the final cuvées. These wines, matured with patience and precision, act in synergy with the year’s harvest to maintain the AYALA style: pure & balanced.
