
After a rainy and cool month of August did not let anyone expect a great
vintage, but very fortunately September was once again beautiful: a very
generous sun gave lovely maturity to the grapes during the day whilst the
nights were cool enough to ensure a perfect sanitary condition.
2004 was a record harvest in Champagne, both in terms of quantity (14 000
kilos/ha) and quality: the average potential alcohol reached 9,7% with a lovely
acidity level of 7,3g/L.
• Pale gold in colour with a lively glint, its mousse is superb and displays very
fine and distinguished necklaces of bubbles.
• The nose displays very charming notes of citrus, pineapple and white flowers.
• The palate is very fresh and pure, intense and beautifully structured, with a
creamy texture, all leading to a pleasant and long finish.
• A very grand and elegant wine combining character and delicacy.
Ayala Blanc de Blancs is made exclusively with Chardonnay from the Grands
Cru villages of Le Mesnil-sur-Oger, Cramant and Chouilly (one third of each).
The wine is aged 5 years in our cellars before disgorgement in order to develop complexity, intensity and roundness.
Very seductive as an aperitif, it is equally divine with St Jacques scallops, or a braised turbot with truffles or even with a crunchy dessert with aniseed pears. Ayala Blanc de Blancs is a wonderful delight for wine lovers of great white wines…
