Champagne Ayala

Voici les notes attribuées à Ayala par Bettane & Desseauve dans leur “Grand Guide des Vins de France 2013”

Installée à Aÿ, cette maison produit des champagnes dotés d'une véritable personnalité, droite, svelte, sans aucune lourdeur, dont les cuvées Nature (c'est-à-dire sans ajout de sucre lors de la mise en bouteille) constituent l'incarnation. Le grand public n'a pas encore pris conscience de la qualité de ces vins : profitez-en, le rapport qualité-prix est incroyable !

- Cuvée Blanc de blancs 2005 : 16/20
Délicat et élancé, joli blanc de blancs, aux arômes fruitées et à l'allonge subtile.

- Cuvée Brut Majeur : 16/20
Excellent brun fin, délié, d'une grande pureté de définition. Parfait apéritif et l'un des meilleurs rapports qualité - prix de Champagne.

- Cuvée Perle d’Ayala 2002 : 16,5/20
Beau vin svelte et vigoureux, finement élancé, aux notes délicates de torréfaction qui s’imposent dans une finale très persistante. Le vin peut encore vieillir.

- Cuvée Perle d’Ayala Nature 2002 : 17/20
Splendide de pureté et de droiture : grand champagne à découvrir à table, sur des crustacés ou des poissons fins.

- Ayala Cuvée Rosé Nature : 16,5/20
Rosé sans concession, pour amateurs exigeants : pur, intense, presque minéral, c’est un vin de très grande intensité et de grande fermeté.

- Ayala Brut Majeur NV : 90 points

A creamy, opulent style, offering honey, apple tart and grapefruit notes, with hints of roasted nut and coffee. This has the structure to stay persistent and fresh, with a crisp, chalky finish.

- Ayala Brut Nature Zéro Dosage NV : 90 points

A toasty Champagne, with a wooly texture, firm acidity and flavors of biscuit, smoke, straw and citrus zest. There’s a minerally vein throughout and good balance overall. Drink now through 2015.

- Ayala Rosé Majeur NV : 90 points

Light-weight and delicate, yet with a dry profile framing strawberry, cherry and red currant flavors. There's grip, but also a harmony that continues into the lingering finish.

Wine Spectator also selected Ayala Blanc de Blancs among the “hot wines” of the moment, their most exciting discoveries from their most recent tastings, and the wine received a top score of 94 points

- Ayala Brut Majeur : 92 points

Ayala always delivers deliberately distinctive style; here we have a pinot-dominant blend driving bold flavour and lower dosage to keep it all savoury and more defined on the palate. Assertive red-fruit aromas, gentle spice and toasty chardonnay citrus. The palate scoops nice and round, then stretches smoothly: some zesty bite and a gentle savoury twist to follow.

- Ayala Brut Nature Zéro Dosage : 93 points

This zero dosage champagne is a favourite aperitif style. Nice and dry it’s essentially the base cuvee of the Brut Majeur without dosage. Superb spicy, red-flora nose. The palate is focused and zesty in much the same way as Brut Majeur but this has more light and shade, more detail. Punchy fruit and savoury finish.

- Ayala Cuvée Rosé Nature : 94 points

Salmon-pink in the glass this zero dosage rose sets itself apart from many rose champagnes that carry far too much sugar. It shows attractive bright red fruits and red perfume and some dried rose petal aromas. The palate has a direct flavoursome appeal, placing rich, fine cherry-like flavour right along the length, with a refined balanced finish.
